We are explicitly told that God created light before He created anything else. So I don't think it raises that particular conundrum. That some light was created ex nihilo without emanating from light-generating sources is not merely required to justify the six day interpretation, as though it was made up later to solve the problem, it is an actual part of the six day interpretation -- it says it right there in scripture. If the "it says it right there in scripture" method is in fact the valid one, then light ex nihilo is not at all confusing -- it's explicitly stated.
