We know that Jesus is the same yesterday, today, and tomorrow. I'm having a little difficulty in grasping whether Jesus is fully human after the cross. We
know that He was 100% God and 100% man while he lived amongst us. But His work was completed. Now, He has His resurrected body, but does that retain human
characteristics? .

Yes, but perfected human characteristics. That is, His body cannot die, be injured, etc. Note the Westminster Shorter Catechism 21: "The only Redeemer of
God's elect is the Lord Jesus Christ who, being the
eternal Son of God, became man, and so was, and continueth to be, God and man in two distinct natures, and one
person, forever." Notice, He "continueth to be...man...forever," with the Scripture proof being Acts
1:11. "This same Jesus, which is taken up from you into heaven, shall so come in like manner as ye have seen him go into heaven." The same
Jesus -- with the same body, just like He had post-resurrection pre-ascension, will return.

Of course it would better to say maybe we are %100 man vs. human. Of course human does have the connotation of physical substance. We have both body and soul. Though the soul can live without the body the vice versa just does not work.
